Fresh Eats with Jenn Spinach Pesto

Spinach pesto or spinach sauce as we call it in our house

With Spring upon us and Spinach is starting to really grow this is one of the most requested dishes in my

house!! I always have one of my little people make it with me and it is so much fun to do together!

It’s a quick one packed with a ton of good stuff as my little helpers say!!

Hope you all enjoy it as much as we all do!!

Spinach Pesto

Spinach pesto or spinach sauce as it is called in our house

Serves 4-6 people

8 oz or 1 cup of spinach about blanched the other half is left raw

A handful of almonds

½ cup of Extra Virgin Olive Oil (add more if you need)

1 clove of garlic

Juice of half of a lemon and the zest

Salt and pepper

Blanch the spinach for 5 minutes should still be bright green

With a mini food processor or larger food processor place the spinach both blanched and raw with the remaining ingredients blend until smooth should still have a brighter green color

Note: We enjoy this pesto over pasta or rice. We also put it over baked or breaded chicken as well as peas and basil depending upon the season and what is available in the house. It is so versatile and lasts in the fridge for up to three days!
